Mango Pudding

I like to cook and several people have asked me for my recipes. So I've decided to post them here once in a while. The first recipe is mango pudding as it is served at dim sum restaurants. I made it for New Years Eve and the taste was pretty good, even though I somehow messed up the gelatin (I think the trick is to make sure it's really dissolved).

Here's what you'll need:


Ingredients

2-3 (750g) mangoes (ripe & sweet)
1 cup (250ml) evaporated milk
2/3 cup (175g) sugar
2 envelopes (10g each) powdered gelatin
1 cup (250ml) water


Tools

Cutting knife & board
potato peeler
Food processor or blender
large bowl
pot
whisk
measuring cups

Preparation

We begin by preparing the mangoes as this will take most of the time. Peel them with the potato peeler.


Cut as much fruit from the seed as possible. Keep some of the larger pieces, so we can cube them for some texture in the pudding. Puree the rest in the food processor. We should end up with 2 parts puree and 1 part mango cubes.


Mix the puree, cubed mango and evaporated milk in a large bowl.

Boil the water and stir in sugar and gelatin until they dissolve. Pour the mixture into the bowl with the mangoes and mix well. That's it.


Pour the pudding into small bowls (that's how it's served in the restaurant) or just one large bowl and chill until set (at least 4 hours).

Tip: you can speed up the chilling process by adding a few ice cubes at the end and stirring until they are fully melted.



Serve with evaporated milk. Enjoy!

The mangoes should be pretty ripe: soft and sweet.

Picking good mangoes can be a pain. I guess we're lucky because asian grocery stores in the bay area usually offer great mangoes. Check out the following guide.
